Who or what inspired you to become a chef?
My mum and family always catered for family events, church events, private functions, etc

What do you enjoy most about your profession?
The opportunity to use great ingredients, fresh produce and the freshest seafood around. Also, training other chefs and meeting new friends and colleagues

How would you describe your cooking style?
Classic trained with totally fresh ingredients, with a little break from the norm

What is your most popular dish?
At Livebait they are all popular, but it depends on the mood and the ingredients. It has to be fresh and tasty!

What is your favorite snack?
Fresh baked bread with New Zealand butter

What is your favorite indulgence?
A six pack, some snacks and uninterrupted watching of live rugby!

What is your death row (last) meal?
Egg & Chips

What would we always find in your freezer or pantry at home?
Wonton wrappers, prawns, eggs and a secret chocolate stash

What annoys you most in the kitchen?
Dirt! A dirty kitchen makes life difficult

What is the most overused/overrated ingredient?
Pesto! You see it everywhere and on most things in some shape or form

What is the most underused/underrated ingredient?
Offal, There are some pretty tasty parts instead of premium cuts

Love a bottle of?
Bolly with the Mrs on New Year’s Eve

Which three cooking tools or gadgets are your favorites?
Knives – can’t live without them, Apron – I’m messy, Robot Coupe – every kitchen should have one!

Is there a food you can’t bring yourself to like?
Not really. I’m keen to try most things

Best meal you ever had, where and why?
Best meal? Nothing rates more than my mom’s cooking

Best thing about being a chef in Australia
They have more produce here than in New Zealand.

If you weren’t a chef, what would you be doing?
Art teacher or Art Designer

Where can we find you on a day off?
Being a vegetable or hanging with the Mrs and family (2 boys and 1 girl)
