On Arrival
• A glass of Sparkling Wine
• Chef’s selection of canapés
Entrée
• Clam and mussel chowder with wok fried snow pea shoots and saffron rouille
• Oysters with pea puree, mace nage and kipfler potato wafers
• Crispy skin duck with truffle potato tortellini and orange balsamic reduction
• Asparagus and goats cheese double baked soufflé with baby arugula leaves and truffle oil (v)
Main
• Crispy skin barramundi served with seared Hokkaido scallops, pumpkin ginger puree and
cress & fennel salad
• Corn-fed chicken maryland with a chive and cheese farce, fondant potato and sorrel veloute
• Char grilled Rib Eye MSA & a grilled tiger prawn served with braised Spanish onion, truffled crushed kipfler
potatoes, and an olive & thyme jus
• Wok fired tiger prawns with a hot & sour soup, crispy noodles and green papaya salad
• Tortellini of roasted eggplant & ricotta with asparagus, warm roma tomatoes and chardonnay vinaigrette with reggiano (v)
