Method
• Sauté onion & garlic until golden brown and caramelised
• Mix all of the ingredients together in a large pot and bring to the boil
• Reduce to a simmer and cook until the mixture is thick enough to coat the back of a spoon
• Let the mix cool
• When it has cooled thoroughly blend the mixture
• Pass it through a strainer, to ensure smooth consistency
• Serve hot or cold with your favourite grilled meats
NOTE - The sauce can be kept in the fridge for up to 10-14 days sealed in an airtight container.
It can also be frozen for later use.
